Our story
Fallow and Finch was founded by Sarah and Veia, a mother and daughter duo.
Sarah owns and operates Walton House B&B in Huonville. Drawing on her experience in property management, guest services, and interior design and styling, she brings a wealth of practical knowledge and a refined eye for detail to every space she creates. Her work is grounded in the belief that great stays begin with thoughtful design and the careful details that make a space feel considered, welcoming, and intentionally crafted to elevate the guest experience and leave a lasting impression.
Veia is a qualified photographer and journalist with a background in storytelling and visual content creation. Her work captures the essence of a space and translates it into imagery that connects emotionally with potential guests. With experience in marketing, creative direction, and guest experience, she understands how to turn a beautiful property into a sought-after stay.
Together, Sarah and Veia created Fallow and Finch to help property owners elevate their short-stay accommodation, from design and styling to photography, branding, and guest experience.
That vision also extends beyond design to the everyday systems that keep a property running well. This includes streamlining booking systems, improving direct websites, and building trusted relationships with reliable suppliers and service providers. From daily operations to long-term efficiency, our aim is to making short-stay operations feel more manageable, sustainable, and rewarding.
We blend heart and strategy with the aim of creating spaces that don’t just look good, but feel good, run smoothly, and are thoughtfully positioned to attract the right guests and support booking success.

Fallow speaks to rest, renewal, and quiet preparation. In farming, fallow land is left untouched so it can recover its richness and grow more abundantly in seasons to come. In nature, the fallow deer is known for its grace, stillness, and watchful presence. We believe there is strength in stillness – and that thoughtful pauses create space for beauty, clarity, and intention to take root. Whether you’re starting fresh or reimagining an existing space, we help you pause, plan, and plant with purpose; so what grows is sustainable, aligned, and deeply grounded in your vision.
Finch brings lightness, joy, and the beauty of simple things done well. These small songbirds symbolise warmth, connection, and home. We carry this spirit into every project, creating spaces that feel generous, welcoming, and full of life. Because in the end, it’s the smallest details – the notes of care and character – that make a stay truly memorable.
